Definition

"Learns" attributes a capability to the training process rather than to hand-written rules: the model derived it from data by minimizing a loss. Titles use it to make the model the grammatical subject — "the model learns to segment" — which is convenient shorthand and also an anthropomorphism worth noticing. Nothing here corresponds to understanding; it names parameters that came to reduce error on an objective.
